Polish Salad Recipe

We usually do a theme night with our friends each time we go camping. This time we had a polish night. Each of the girls were in charge of making a polish dish. (Me, Allix, Shelbi, and Maddie.) I made a polish salad. Here's the recipe:

Polish Salad

6-8 servings

2 large potatoes
2 carrots
2 stalks celery
2 tomatoes
2 hard-boiled eggs
1 golden delicious apple
1 dill pickles
1/3 sweet onions
Dressing
1 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon pickle brine
1 teaspoon dry mustard
salt and pepper

Peel potatoes, boil until tender, dice small.
Dice carrots, celery, tomatoes, eggs, and onion.
Peel and core apple.
Dice.
Mix together dressing.
Combine and refrigerate at least 3 hours.


We didn't know what pickle brine was, so we used pickle juice. There is a picture of the finished product below.
